Bourbon Making Process

Mashing
In a large pot, combine the sweet corn and about 10 liters of water. Heat the mixture to 160°F (71°C) and maintain this temperature for about 1 hour, stirring occasionally to ensure even cooking.

Cooling and Fermentation
Allow the mash to cool to around 70°F (21°C). Once cooled, add the yeast and mix well. Cover the mixture and let it ferment for about 5 to 7 days in a warm, dark place until fermentation is complete.

Distillation
Once fermentation is complete, transfer the mash to a still. Distill the liquid, collecting the ‘heart’ of the distillation which will become your bourbon. Discard the ‘heads’ and ‘tails’ of the distillation process.

Aging
Pour the distilled spirit into charred oak barrels and age for at least 2 years. The longer you age, the more complex the flavors will become. For this bourbon, aim for a minimum of 4 years.

Bottling
After aging, pour the bourbon into bottles. You may want to blend different barrels to achieve the desired flavor profile. Store in a cool, dark place.
