Lobster Filling

Brioche Rolls

Method

Preparation

  1. 1

    Cook the Lobster

If using live lobster, bring a large pot of salted water to a boil. Add the lobsters and cook for 8-10 minutes until they turn bright red. Remove them from the pot and let cool. Once cooled, remove the meat from the shell and chop into bite-sized pieces.

  2. 2

    Prepare the Drawn Butter

In a small saucepan, melt the butter over low heat until fully melted. Keep warm but do not let it boil.

  3. 3

    Combine Ingredients

In a mixing bowl, gently toss the lobster meat with half of the drawn butter and season with salt and pepper to taste.

Assembly

  1. 4

    Toast the Brioche Rolls

Butter the outside of each brioche roll and toast them on a skillet over medium heat until golden brown and crispy.

  2. 5

    Assemble the Rolls

Place a generous amount of shredded lettuce inside each toasted brioche roll. Top with the lobster mixture and drizzle with additional drawn butter before serving.
