Marinate the Chicken
In a large bowl, combine the buttermilk, garlic powder, onion powder, paprika, salt, and black pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, preferably overnight.

Fry the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Remove chicken from the marinade, allowing excess to drip off. Dredge chicken in flour, coating evenly. Fry chicken in hot oil for about 5-7 minutes per side, or until golden brown and cooked through. Drain on paper towels.

Make the Waffle Batter
In a large bowl, whisk together the flour, baking powder, sugar, and salt. In another bowl, whisk the milk, eggs, and melted butter. Pour the wet ingredients into the dry ingredients and mix until just combined.

Preheat a waffle iron. Pour the batter into the waffle iron according to the manufacturer's instructions and cook until golden brown. Repeat until all batter is used.

Assemble the Dish
Place a waffle on a plate, top with a piece of crispy chicken, a fried egg, and drizzle with Maine maple syrup. Finish with another waffle on top to create a 'bun.' Serve immediately.
