Prepare the Potatoes
Peel the Maine potatoes and cut them into thick fries, approximately 1/2 inch wide.

First Cook
Place the cut fries in a pot of cold water and bring to a boil. Boil for about 10 minutes until they are just tender but not falling apart. Drain and let cool.

Second Cook
Heat vegetable oil in a deep fryer or large pot to 320°F (160°C). Fry the cooled fries in batches for about 5 minutes until they are pale and soft. Remove and drain on paper towels.

Third Cook
Increase the oil temperature to 375°F (190°C). Fry the par-cooked fries in batches again for 3-4 minutes until they are golden brown and crispy. Remove and drain on paper towels.

Season and Serve
Sprinkle the fries with salt while they are still hot. Serve immediately.
