Base Preparation

Heat the Cream and Milk
In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring occasionally, until the mixture is warm and the sugar has dissolved.

Temper the Egg Yolks
Slowly pour about a cup of the warm cream mixture into the egg yolks, whisking constantly to temper them. This will prevent the yolks from scrambling.

Add Flavorings
Remove from heat and stir in the pure vanilla extract and a pinch of salt. If making chocolate ice cream, add the unsweetened cocoa powder and melted dark chocolate at this stage and mix well.

Chill the Mixture
Transfer the mixture to a bowl, cover, and refrigerate for at least 4 hours or overnight until thoroughly chilled.
Churning and Freezing

Churn the Ice Cream
Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Freeze the Ice Cream
Transfer the churned ice cream to an airtight container and freeze for at least 4 hours or until firm.
