    Wash and Cut Potatoes

    Wash the Russet potatoes thoroughly under running water to remove any dirt. Peel the potatoes if desired, then cut them into thin strips, about 1/4-inch thick.

    Soak in Water

    Place the cut potato strips in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and will result in crispier fries.

Frying

    Prepare Oil for Frying

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture. This step is crucial to avoid oil splatter during frying.

    Fry the Potatoes

    Carefully add a handful of the dried potato strips to the hot oil. Avoid overcrowding the pot. Fry for about 4-5 minutes or until they turn golden brown and crispy. Remove them using a slotted spoon and place them on paper towels to drain excess oil.

    While the fries are still hot, sprinkle them with salt and paprika to taste. Toss gently to ensure they are evenly coated.
