Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour to prevent sticking.

  2. 2

    Melt the Chocolate and Butter

In a microwave-safe bowl, combine the semisweet chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until completely melted and smooth.

  3. 3

    Mix the Egg Mixture

In a separate bowl, whisk together the large eggs, large egg yolks, and granulated sugar until well combined and slightly frothy.

  4. 4

    Combine Mixtures

Slowly pour the melted chocolate mixture into the egg mixture, stirring continuously to combine. Add the vanilla extract and a pinch of salt, mixing well.

  5. 5

    Add the Flour

Sift the all-purpose flour into the chocolate mixture and gently fold until just combined. Be careful not to over-mix.

Baking

  1. 6

    Fill Ramekins

Evenly distribute the batter among the prepared ramekins, filling them about 3/4 full.

  2. 7

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  3. 8

    Cool and Serve

Remove from the oven and let the cakes cool for 1 minute. Carefully invert each ramekin onto a plate and let the cake slide out. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream and fresh berries.
