Preheat your oven to 350°F (175°C) and grease a loaf pan.

Cream Butter and Sugar
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Beat in the eggs one at a time, mixing well after each addition.

In another bowl, whisk together the flour, baking powder, and salt.

Gradually add the dry ingredients to the creamed mixture, alternating with the lemon juice, and mix until just combined.

Fold in the lemon zest and vanilla extract until evenly distributed.

Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
