Wash the fresh apples and raspberries thoroughly. Core and chop the apples into small pieces, keeping the skin on for added flavor and color.

Prepare the Fruit

In a large pot, combine the chopped apples, raspberries, and water. Bring to a boil, then reduce heat and let it simmer for about 30 minutes, mashing the fruit occasionally to release the juices.

Make the Cider Base

After simmering, strain the mixture through a fine mesh sieve or cheesecloth into a large bowl or fermenter, pressing down on the solids to extract as much juice as possible.

Stir in the sugar and lemon juice into the strained juice until dissolved.

Sprinkle the yeast over the surface of the juice, and if desired, add tannin to taste. Stir gently to combine.

Transfer the mixture to a fermentation vessel, cover with an airlock, and allow it to ferment in a cool, dark place for 1-2 weeks or until fermentation has stopped.

Fermentation

Once fermentation is complete, bottle the cider in clean, sanitized bottles. Leave some space at the top of each bottle.

Bottling

If you desire carbonation, add a small amount of sugar (1 tsp per bottle) before sealing the bottles. Seal tightly and store in a cool place for 1-2 weeks.

Refrigerate the bottles before serving. Pour into glasses and enjoy your homemade Brut Rosé Cider!
