Step 1: Prepare the Apples
Wash and core the fresh apples. Cut them into quarters and place them in a large pot.

Step 2: Cook the Apples
Add the water to the pot with the apples and bring to a boil. Reduce the heat and simmer for about 30 minutes until the apples are soft.

Once the apples are soft, use a potato masher or a blender to mash the apples thoroughly. Strain the mixture through a cheesecloth or fine sieve into a clean container to collect the juice.

Step 5: Fermentation
Allow the mixture to cool to room temperature, then sprinkle the yeast over the top. Stir gently to combine. Cover the container with a clean cloth and let it ferment in a cool, dark place for about 1-2 weeks.

Step 7: Carbonation (optional)
If you prefer a sparkling cider, you can add a small amount of sugar (1 tsp per bottle) before sealing to encourage carbonation.
