Method

Brownie Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.

  2. 2

    Melt Chocolate and Butter

In a medium saucepan, melt the chopped Belgian chocolate and unsalted butter over low heat, stirring until smooth. Remove from heat and let cool slightly.

  3. 3

    Mix Dry Ingredients

In a separate bowl, whisk together the all-purpose flour, cocoa powder, and salt.

  4. 4

    Combine Ingredients

In a large bowl, whisk together the granulated sugar, brown sugar, and eggs until well combined. Stir in the vanilla extract. Add the melted chocolate mixture and mix until just combined. Gradually fold in the dry ingredients until no streaks remain.

  5. 5

    Bake

Pour the brownie batter into the prepared baking dish and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

  6. 6

    Cool

Allow the brownies to cool in the pan for at least 20 minutes before cutting into squares.

Chocolate Ganache Preparation

  1. 7

    Heat Cream

In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.

  2. 8

    Combine with Chocolate

Remove from heat and add the chopped Belgian chocolate. Let it sit for a few minutes, then stir until smooth and glossy.

  3. 9

    Top Brownies

Once the brownies are completely cooled, pour the ganache over the brownies and spread it evenly. Allow it to set before serving.
