Prepare the Beef Tenderloin
Season the beef tenderloin with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Sear the beef on all sides until browned, about 4-5 minutes per side for medium-rare. Remove from the skillet and let it rest.

Make the Balsamic Cream Sauce
In the same skillet, add balsamic vinegar and scrape any browned bits from the bottom. Allow it to reduce for about 5 minutes. Stir in heavy cream and let it simmer until thickened, about 3-4 minutes. Season with salt and pepper to taste.

Serve
Slice the rested beef tenderloin and serve with the balsamic cream sauce drizzled on top. Plate with collard greens and a side of black eyed peas for good fortune.
