Preparation and Assembly

Prepare the Gelatin
In a small bowl, combine gelatin powder with 2 tablespoons of water. Let it sit for about 5 minutes until it blooms.

Melt the Chocolate
In a heatproof bowl, melt the dark chocolate over a double boiler or in the microwave in 30-second intervals, stirring until smooth. Allow to cool slightly.

Whip the Cream
In a separate bowl, whip the heavy cream with sugar until soft peaks form.

Combine Ingredients
Gently fold the melted chocolate into the whipped cream until fully combined. Then, add the bloomed gelatin and mix until smooth.

Prepare Strawberries
Puree the fresh strawberries in a blender or food processor until smooth. You can strain the puree through a sieve if you want a smoother texture.

Layer the Mousse
In the edible chocolate cups, layer the chocolate mousse mixture and strawberry puree alternately until the cups are filled.

Refrigerate the filled chocolate cups for at least 1 hour to set before serving.
