Preheat the oven to 400°F (200°C). Wash the baby potatoes thoroughly and dry them. Place them in a bowl and toss with olive oil, salt, and pepper.

Roast the Potatoes
Spread the seasoned baby potatoes on a baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes or until fork-tender and golden brown.

Create Potato Cups
Once the potatoes are cooked, remove them from the oven and let them cool slightly. Carefully scoop out the center of each potato using a small spoon, creating a small cup.

Fill with Pimento Cheese
Fill each potato cup with pimento cheese spread, generously heaping it on top.

Garnish and Serve
Chop the chives and sprinkle them over the filled potato cups for garnish. Serve warm as a delightful amuse bouche for kids.
