Crispy Polenta and Pickled Corn Relish

Preparation Steps

    Prepare the Polenta

    In a medium saucepan, bring 4 cups of water to a boil. Add 1 tsp of salt and gradually whisk in the polenta. Reduce heat to low and cook, stirring frequently, until thickened (about 15-20 minutes). Pour the cooked polenta into a greased baking dish and spread evenly. Allow to cool and set for at least 30 minutes.

    Make the Pickled Corn Relish

    In another saucepan, combine corn kernels, white vinegar, sugar, and chopped red onion. Bring to a boil and let simmer for 5 minutes. Remove from heat and stir in chopped cilantro. Allow to cool.

    Cut and Fry the Polenta

    Once the polenta has set, cut it into small squares or rounds. Heat olive oil in a skillet over medium heat. Fry the polenta pieces until golden and crispy on both sides (about 3-4 minutes per side).

    Assemble and Serve

    Top each crispy polenta piece with a spoonful of pickled corn relish. Season with black pepper to taste. Serve immediately as an amuse bouche.
