    Prepare the Potatoes

    Peel the Yukon Gold potatoes and cut them into roughly equal-sized chunks (about 1-2 inches). If using garlic, peel the cloves and set aside.

    Boil the Potatoes

    Place the potato chunks in a large pot and cover them with cold water. Add 1 teaspoon of salt. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for about 15-20 minutes, or until the potatoes are fork-tender.

    Drain and Steam Dry

    Drain the potatoes in a colander and return them to the pot. Allow them to steam dry for about 2-3 minutes to remove excess moisture.

    Mash the Potatoes

    Add the butter and cream to the potatoes. Use a potato masher or a ricer to mash the potatoes until smooth. If using garlic, you can add minced garlic at this stage.

    Season and Serve

    Season the mashed potatoes with salt and black pepper to taste. If desired, garnish with chopped fresh chives before serving.
