    Prepare the Potatoes

    Preheat your oven to 425°F (220°C). Scrub the potatoes under cold water and pat them dry with a towel. Prick each potato several times with a fork, then rub them with olive oil and sprinkle with salt.

    Bake the Potatoes

    Place the potatoes directly on the oven rack or on a baking sheet. Bake for about 45-60 minutes, or until the skin is crispy and a fork easily pierces the flesh.

    Prepare Toppings

    While the potatoes are baking, chop the scallions finely and set aside. Mix the sour cream with salt and pepper to taste.

    Serve

    Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Cut a slit in the top of each potato and gently squeeze the ends to open them up. Add a generous amount of butter, a dollop of sour cream, and sprinkle with scallions. Season with additional salt and pepper if desired.
