Prepare the Steak

Take the Bife de Chorizo out of the refrigerator and let it come to room temperature for about 30 minutes.

Season the Steak

Rub the steak with olive oil, then generously season both sides with salt, black pepper, and garlic powder. If desired, sprinkle fresh rosemary on top.

Grilling

Preheat the Grill

Preheat your grill to high heat, approximately 400-450°F (200-230°C).

Grill the Steak

Place the seasoned steak on the grill and cook for 4-5 minutes on one side for medium-rare. Flip the steak and continue grilling for another 4-5 minutes. Adjust the time for your desired level of doneness.

Rest the Steak

Remove the steak from the grill and let it rest for at least 5 minutes to allow the juices to redistribute.

Slice the steak against the grain and serve with lemon wedges and chimichurri sauce on the side.
