    Prepare the Brisket

    Preheat your smoker to 225°F. Rub the brisket with olive oil, salt, pepper, and smoked paprika. Place the brisket in the smoker and cook for about 6-8 hours until tender, maintaining a consistent temperature.

    Make the Papaya Slaw

    While the brisket is smoking, prepare the papaya slaw. Julienne the papaya, cabbage, and carrot. In a bowl, combine the vegetables and toss with your preferred vinaigrette or a mix of olive oil, vinegar, salt, and pepper. Set aside.

    Assemble the Sandwich

    Once the brisket is done, let it rest for 30 minutes before slicing. Cut the sandwich rolls in half and layer with sliced brisket, a slice of provolone cheese, a generous amount of papaya slaw, BBQ sauce, and creamy tiger cry sauce.
