Prepare the Ingredients
Finely chop the fresh ginger and Thai chili peppers. Coarsely chop the roasted peanuts and set aside.

Cook the Sausages
In a large skillet, heat the vegetable oil over medium heat. Add the cured pork sausages and fry until they are golden brown and cooked through, about 10-15 minutes. Make sure to turn them occasionally for even cooking.

Add Ginger and Chili
Once the sausages are cooked, add the chopped ginger and Thai chili peppers to the skillet. Stir well to combine and sauté for an additional 2-3 minutes until fragrant.

Season and Serve
Drizzle the fish sauce over the sausage mixture and stir to combine. Cook for another minute, then remove from heat. Serve warm, garnished with the chopped roasted peanuts on top.
