Prepare the Filling
In a large mixing bowl, combine pulled pork, cooked bean thread noodles (prepared according to package instructions), shredded cabbage, grated carrot, diced celery, and sliced shiitake mushrooms. Mix well until all ingredients are evenly incorporated.

Assemble the Egg Rolls
Place a spring roll wrapper on a clean surface. Spoon about 2 tablespoons of the filling onto the center of the wrapper. Fold the bottom over the filling, then fold the sides in, and roll tightly to seal. Repeat with remaining wrappers and filling.

Fry the Egg Rolls
In a deep skillet or frying pan, heat vegetable oil over medium heat. Once hot, carefully add a few egg rolls at a time, being cautious not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Serve the hot pulled pork egg rolls with sweet & sour sauce for dipping.
