Marinating the Pork
In a large bowl, combine soy sauce, fish sauce, minced garlic, sugar, and black pepper. Add the pork loin and ensure it is well-coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

Preparing for Frying
Remove the pork from the marinade and pat dry with paper towels. Dredge the pork loins in cornstarch until fully coated, shaking off any excess.

Frying the Pork
In a large skillet or deep frying pan, heat the vegetable oil over medium-high heat. Once the oil is hot, carefully add the pork loins in batches, frying for about 4-5 minutes on each side or until golden brown and cooked through. Remove the pork and place on a paper towel-lined plate to drain excess oil.

Serve the fried pork loins hot with a side of Thai sriracha sauce for dipping.
