Method

Sugar Cured Strip Loin

    Prepare the Cure

    In a bowl, mix together brown sugar, kosher salt, black pepper, garlic powder, and onion powder.

    Cure the Meat

    Rub the mixture all over the strip loin, ensuring it is well coated. Wrap tightly in plastic wrap and refrigerate for 24-48 hours.

    Cook the Meat

    After curing, remove the strip loin from the refrigerator, rinse under cold water, and pat dry. Preheat the grill or oven to 400°F (200°C). Cook the strip loin to your desired doneness, around 15-20 minutes per side for medium-rare.

    Rest the Meat

    Let the strip loin rest for 10 minutes before slicing.

Roasted Garlic Demi-Glace

    Roast the Garlic

    Cut the tops off the garlic bulbs, drizzle with olive oil, wrap in foil, and roast in the oven at 400°F (200°C) for 30-35 minutes until soft.

    Prepare the Sauce

    In a saucepan, combine beef stock and red wine. Bring to a boil, then reduce to a simmer.

    Add Roasted Garlic

    Squeeze the roasted garlic cloves into the saucepan, add fresh thyme, and season with salt and pepper. Simmer until the sauce reduces by half, about 20-25 minutes.

    Finish the Sauce

    Whisk in the butter until melted and the sauce is smooth.

Creamy Mashed Potatoes

    Prepare the Potatoes

    Peel and chop the russet potatoes into even chunks. Place in a pot of salted water and bring to a boil.

    Cook the Potatoes

    Cook until the potatoes are tender, about 15-20 minutes. Drain and return to the pot.

    Mash the Potatoes

    Add butter and heavy cream to the potatoes, then mash until creamy and smooth. Season with salt and pepper to taste.

    Wash and chop the mixed seasonal vegetables into bite-sized pieces.
