Preparation

1. Prepare the Ingredients

Begin by chopping the beef sirloin into 1-inch cubes. Peel and chop the onion, carrots, and potatoes into bite-sized pieces. Mince the garlic cloves.

2. Brown the Beef

In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Add the beef cubes and season with salt and black pepper. Brown the beef on all sides for about 5-7 minutes. Remove the beef and set aside.

3. Sauté the Vegetables

In the same pot, add the chopped onion and garlic. Sauté for about 3-4 minutes until the onion becomes translucent. Add the carrots and potatoes, and cook for an additional 5 minutes.

4. Combine Ingredients

Return the browned beef to the pot. Pour in the beef broth and red wine, and add the thyme and bay leaf. Stir to combine all ingredients.

5. Simmer the Stew

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1.5 to 2 hours, or until the beef is tender and the flavors are well blended. Stir occasionally.

6. Add Optional Ingredients

If using, add the peas during the last 15 minutes of cooking. Adjust seasoning with more salt and pepper if needed.

7. Serve

Remove the bay leaf before serving. Ladle the stew into bowls and garnish with chopped parsley, if desired.
