Roast the Garlic
Preheat the oven to 400°F (200°C). Slice the top off the whole garlic bulb to expose the individual cloves. Drizzle the garlic with olive oil and wrap it in aluminum foil. Roast in the oven for about 30-35 minutes or until the cloves are soft and caramelized.

Boil the Potatoes
Peel and chop the russet potatoes into even chunks. Place them in a large pot, cover with water, and add 1 tablespoon of salt. Bring to a boil over high heat, then reduce to a simmer. Cook for about 15-20 minutes or until the potatoes are fork-tender.

Mash the Potatoes
Once the potatoes are cooked, drain them well and return them to the pot. Squeeze the roasted garlic cloves out of their skins and add them to the potatoes. Add the unsalted butter, heavy cream, and cream cheese.

Using a potato masher or a hand mixer, mash the potatoes until smooth and creamy. Season with black pepper to taste. Adjust the consistency by adding more heavy cream if needed.
