Method
Preparation
- 1
Prepare the Steak
Remove the ribeye steaks from the refrigerator and allow them to come to room temperature for about 30 minutes before cooking.
- 2
Season the Steaks
Generously season both sides of the ribeye steaks with kosher salt, black pepper, and garlic powder. Pat the seasoning into the meat with your fingers for better adherence.
Cooking
- 3
Heat the Pan
In a large skillet or cast-iron pan, heat the olive oil over medium-high heat until it shimmers but does not smoke.
- 4
Sear the Steaks
Carefully place the seasoned ribeye steaks in the hot skillet. Sear them for about 4-5 minutes on one side without moving them to form a nice crust.
- 5
Flip the Steaks
Using tongs, flip the steaks over and cook for an additional 4-5 minutes for medium-rare. Adjust the cooking time based on your preferred doneness.
- 6
- 7
Rest the Steaks
Remove the ribeye steaks from the skillet and let them rest on a cutting board for 5-10 minutes. This allows the juices to redistribute throughout the meat.
Serving
- 8
Slice and Serve
Slice the ribeye steaks against the grain and serve immediately, optionally garnished with additional rosemary sprigs.
