    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Wash and scrub the Russet potatoes thoroughly, then slice them thinly, about 1/8 inch thick. You can use a mandoline for even slices.

    Season the Chips

    In a large bowl, toss the sliced potatoes with olive oil, salt, black pepper, garlic powder, onion powder, dried dill, and chives. Ensure each potato slice is evenly coated with the seasoning mixture.

    Bake the Chips

    Spread the seasoned potato slices in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for about 25-30 minutes, flipping halfway through, until they are golden brown and crispy.

    Prepare the Garlic

    While the chips are baking, prepare the roasted garlic. Cut the tops off the garlic bulbs to expose the cloves. Drizzle with olive oil and wrap each bulb in aluminum foil.

    Roast the Garlic

    Place the wrapped garlic bulbs in the oven alongside the chips for about 30-35 minutes, or until the cloves are soft and caramelized. Allow to cool slightly before using.

    Incorporate Roasted Garlic

    Once cool, squeeze the roasted garlic cloves out of their skins into a bowl and mash them with a fork. Mix the mashed garlic into the seasoning mixture before tossing with the potato slices for added flavor.
