Salmon

Method

Salmon Preparation

  1. 1

    Season the Salmon

Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper.

  2. 2

    Heat the Pan

In a large skillet, heat the olive oil over medium-high heat until it shimmers.

  3. 3

    Cook the Salmon

Place the salmon fillets skin-side down in the skillet. Cook for about 4-5 minutes until the skin is crispy and the salmon is cooked halfway up the sides.

  4. 4

    Flip the Salmon

Carefully flip the salmon fillets and cook for an additional 3-4 minutes for medium doneness. Remove from the skillet and set aside.

Garlic Demi-Glace Preparation

  1. 5

    Melt the Butter

In the same skillet used for the salmon, reduce the heat to medium. Add the butter and let it melt.

  2. 6

    Sauté Garlic

Add minced garlic to the melted butter and sauté for about 1 minute until fragrant.

  3. 7

    Add Broth and Soy Sauce

Pour in the chicken or vegetable broth and soy sauce, stirring to combine. Bring to a simmer.

  4. 8

    Thicken the Sauce

In a small bowl, mix the cornstarch and water to create a slurry. Slowly add the slurry to the sauce, stirring constantly until thickened, about 2-3 minutes.

  5. 9

    Finish the Sauce

Stir in the chopped parsley and remove from heat.
