Crab and Asparagus Preparation

    Prepare the Asparagus

    Trim the tough ends off the asparagus spears. In a large pot of salted boiling water, blanch the asparagus for about 2-3 minutes until they are bright green and tender-crisp. Drain and immediately transfer to a bowl of ice water to stop the cooking process.

    Sauté the Crab

    In a skillet, heat olive oil over medium heat. Add the crab meat and season with salt and black pepper. Sauté gently for 2-3 minutes until warmed through. Remove from heat and set aside.

    Combine Ingredients

    Once the asparagus is cooled and drained, arrange the asparagus on a serving plate and spoon the sautéed crab meat over the top.

Hollandaise Sauce Preparation

    Melt the Butter

    In a small saucepan, melt the unsalted butter over low heat. Once melted, allow it to cool slightly while you prepare the egg yolks.

    Whisk the Egg Yolks

    In a heatproof bowl, whisk together the egg yolks and lemon juice until the mixture is pale and thick. This can be done using a hand whisk or an electric mixer.

    Create the Sauce

    Place the bowl over a pot of simmering water (double boiler). Gradually drizzle in the melted butter while whisking continuously until the sauce is thickened and creamy. Season with salt and cayenne pepper to taste.

    Serve

    Drizzle the prepared hollandaise sauce over the crab and asparagus just before serving.
