Onion Rings

    Prepare the Onions

    Peel the large onions and slice them into 1/2-inch thick rings. Separate the rings and set them aside.

    Make the Batter

    In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold water while whisking until the batter is smooth and free of lumps.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Onion Rings

    Dip each onion ring into the batter, allowing any excess to drip off before carefully placing it in the hot oil.

    Fry the Onion Rings

    Fry the onion rings in batches, being careful not to overcrowd the pot. Cook for about 2-3 minutes or until they are golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.

    Mix the Ranch Ingredients

    In a small bowl, combine the mayonnaise, sour cream, diced cherry peppers, dried dill, and garlic powder. Mix well until all ingredients are well incorporated.

    Cover the ranch dressing and refrigerate for at least 30 minutes to allow the flavors to meld.
