Caramelized Onion Jam Directions
1. Prepare the Onion
Slice the large onion thinly to ensure even cooking.
2. Start Caramelizing
In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and sprinkle with 0.5 tsp of salt. Cook slowly for about 15-20 minutes until the onions are soft and golden brown.
3. Add Sweetness and Flavor
Stir in 1 tablespoon of brown sugar and 1 tablespoon of balsamic vinegar. Continue cooking for another 5-10 minutes until the mixture is thick and jam-like. Remove from heat and set aside.

4. Prepare the Patties
In a bowl, combine 1 pound of ground beef with 1 teaspoon of salt and 0.5 teaspoon of black pepper. Mix gently and form into two patties.
5. Cook the Bacon
In a skillet, cook 4 strips of bacon over medium heat until crispy. Remove and drain on paper towels.
6. Cook the Burgers
In the same skillet with bacon drippings, cook the burger patties over medium-high heat for about 4-5 minutes on each side, or until they reach your desired doneness.
7. Add the Cheese
In the last minute of cooking, place 2 ounces of gorgonzola cheese on each patty and cover the skillet to melt the cheese.
8. Assemble the Burger
On each brioche bun, place a burger patty, top with caramelized onion jam and crispy bacon. Add the top bun and serve immediately.
