Fried Calamari

Prepare the Calamari
Rinse the calamari rings under cold water and pat dry with paper towels.

Make the Batter
In a large mixing bowl, combine all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well.

Soak the Calamari
Pour the buttermilk over the calamari rings in a separate bowl and allow them to soak for about 15 minutes.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Calamari
Remove the calamari from the buttermilk and allow excess to drip off. Dredge each ring in the flour mixture, ensuring they are fully coated.

Fry the Calamari
Carefully place the coated calamari rings into the hot oil in batches. Fry for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Add the Tomatoes
Pour in the canned crushed tomatoes, and stir in oregano, salt, and black pepper. Bring to a simmer.

Finish the Sauce
Let the sauce simmer for about 15-20 minutes, stirring occasionally. Stir in the chopped fresh basil just before serving.
