Slice the Onions
Thinly slice the onions and set aside.

Deglaze with Wine
Pour in the dry white wine and scrape the bottom of the pot to deglaze. Allow the wine to cook down slightly, about 5 minutes.

Add Broth and Herbs
Add the beef broth, thyme, bay leaf, salt, and pepper. Bring the mixture to a simmer and cook for 20-30 minutes to let the flavors meld.

Remove Bay Leaf
After simmering, remove the bay leaf from the soup.
Cheese Toast Preparation

Prepare Baguette
Slice the baguette into 1-inch thick slices and arrange them on a baking sheet.

Toast Baguette
Broil the baguette slices in the oven for 2-3 minutes until golden brown on top.

Add Cheese
Remove the toasted baguette from the oven and sprinkle Gruyere and Parmesan cheese generously on top of each slice.

Melt Cheese
Return the baguette slices to the oven and broil for an additional 2-3 minutes until the cheese is melted and bubbly.
