Prepare the Steak

    Season the Steaks

    Sprinkle salt and black pepper evenly over both sides of the filet mignon steaks. Let them sit at room temperature for about 30 minutes to allow the seasoning to penetrate the meat.

    Preheat the Pan

    In a large skillet or cast iron pan, heat olive oil over medium-high heat until it shimmers but does not smoke.

Cooking the Steak

    Sear the Steaks

    Place the seasoned filet mignon steaks in the hot pan. Sear for 3-4 minutes without moving them to develop a nice crust.

    Flip the Steaks

    Using tongs, carefully flip the steaks and sear the other side for another 3-4 minutes for medium-rare. Adjust cooking time as desired for doneness.

Butter Basting

    Add Butter and Aromatics

    Reduce the heat to medium. Add the unsalted butter, garlic cloves, and fresh rosemary to the pan. As the butter melts, use a spoon to baste the steaks with the melted butter for an additional 1-2 minutes.

    Rest the Steaks

    Remove the filet mignon from the pan and transfer to a cutting board. Cover loosely with foil and let rest for 5-10 minutes before slicing.
