Preparation

    Cook the Fettuccine

    In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside.

    Roast the Cherry Tomatoes

    In a skillet over medium heat, add 1 tablespoon of butter. Once melted, add the cherry tomatoes and sauté for about 5-7 minutes until they are blistered and starting to burst. Remove from the skillet and set aside.

    Prepare the Shrimp

    In the same skillet, add the remaining butter and allow it to melt. Add the shrimp and cook for about 2-3 minutes on each side until they are pink and opaque.

    Combine Ingredients

    Once the shrimp are cooked, pour in the white wine and lemon juice. Allow it to simmer for 2 minutes to reduce slightly. Stir in the roasted cherry tomatoes, fresh dill, and parsley.

    Season

    Season the mixture with salt and black pepper to taste. Stir well to combine all the flavors.

    Serve

    Serve the shrimp scampi over the cooked fettuccine, garnishing with extra dill and parsley if desired.
