Mix the Marinade
In a large bowl, combine soy sauce, brown sugar, grated ginger, minced garlic, sesame oil, and rice vinegar. Whisk together until the sugar is dissolved.

Marinate the Chicken
Cut the chicken breast into 1-inch cubes and add them to the marinade. Ensure all pieces are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Prepare the Skewers
While the chicken is marinating, soak the wooden skewers in water for at least 30 minutes. This prevents them from burning on the grill.

After marinating, thread the chicken cubes onto the soaked skewers, leaving a little space between each piece.
