Calamari Preparation

    Soak the Calamari

    Place the calamari rings in a bowl and pour the buttermilk over them. Ensure all the rings are coated. Let them soak for at least 30 minutes in the refrigerator.

    Prepare the Breading

    In a separate bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika.

    Heat the Oil

    In a deep frying pan or Dutch oven, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

    Coat the Calamari

    Remove the calamari from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring they are fully coated.

    Fry the Calamari

    Carefully place the coated calamari rings into the hot oil in batches. Fry for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

Marinara Sauce Preparation

    Sauté the Garlic

    In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.

    Add Tomatoes and Seasonings

    Stir in the canned crushed tomatoes, dried oregano, salt, black pepper, and sugar. Bring to a simmer.

    Finish the Sauce

    Reduce heat to low and let the sauce simmer for 15-20 minutes. Stir in the fresh basil before serving.
