Pork Chops

Potato, Red Pepper, and Spinach Hash

Method

Pork Chops

  1. 1

    Prepare the Rub

In a small bowl, combine brown sugar, Dijon mustard, salt, and black pepper to create a rub.

  2. 2

    Apply the Rub

Rub the mixture generously over the boneless pork chops, ensuring they are evenly coated.

  3. 3

    Cook the Pork Chops

In a skillet, heat olive oil over medium-high heat. Add the pork chops and cook for 4-5 minutes on each side until they are golden brown and cooked through. Remove from heat and let rest.

Potato, Red Pepper, and Spinach Hash

  1. 4

    Prepare the Vegetables

In a large skillet, heat olive oil over medium heat. Add diced potatoes and cook until they start to soften, about 10 minutes.

  2. 5

    Add Pepper and Onion

Add the diced red bell pepper and onion to the skillet. Sauté for an additional 5 minutes until the onions are translucent.

  3. 6

    Finish with Spinach and Seasoning

Stir in the minced garlic, fresh spinach, salt, and black pepper. Cook for another 2-3 minutes until the spinach is wilted and all vegetables are tender.

Brandy Berry Sauce

  1. 7

    Cook the Sauce

In a medium saucepan over medium heat, combine mixed berries, brandy, sugar, and lemon juice. Stir and cook until the berries break down and the sauce thickens, about 5-7 minutes.

  2. 8

    Serve the Sauce

Remove from heat and allow to cool slightly before serving over the pork chops.
