Cook the Beef
In a large skillet over medium heat, add the ground beef. Cook until browned and fully cooked, about 6-8 minutes. Drain any excess fat.

Mix in Other Ingredients
Stir in the shredded American cheese, chopped pickles, and Thousand Island dressing into the skillet. Cook until the cheese is melted and everything is well combined, about 2-3 minutes. Remove from heat and let cool slightly.
Assembling the Egg Rolls

Fill the Wrappers
Lay an egg roll wrapper on a clean, flat surface with a corner pointing towards you. Place about 2-3 tablespoons of the beef filling in the center of the wrapper.

Roll the Egg Roll
Fold the bottom corner over the filling, then fold in the sides, and roll tightly away from you. Seal the top corner with a little water.

Repeat
Repeat the filling and rolling process with the remaining egg roll wrappers and filling.
