Oysters Preparation

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare Oysters

    Carefully shuck the local oysters and place them on a baking sheet. Keep them in their half shells.

    Cook Pancetta

    In a skillet over medium heat, cook the diced pancetta until crispy. Remove from heat and let drain on paper towels.

    Sauté Spinach

    In the same skillet, add the chopped spinach and sauté until wilted, about 2-3 minutes.

    Mix Filling

    In a bowl, combine the sautéed spinach, crispy pancetta, and grated Parmesan cheese. Mix well.

    Fill Oysters

    Spoon the spinach and pancetta mixture generously over each oyster.

    Add Ritz Crumbs

    Sprinkle the crushed Ritz crackers on top of the filled oysters.

Baking and Serving

    Bake Oysters

    Place the baking sheet with the filled oysters in the preheated oven and bake for about 10-12 minutes, until the topping is golden and crispy.

    Prepare Hollandaise Sauce

    While the oysters are baking, prepare the hollandaise sauce. In a double boiler, whisk together the egg yolks and lemon juice until pale and thickened.

    Add Butter to Hollandaise

    Gradually whisk in the melted unsalted butter until the sauce is thick and smooth. Season with salt and a pinch of cayenne pepper.

    Serve Oysters

    Remove the oysters from the oven and drizzle the warm hollandaise sauce over each oyster before serving.
