Preheat your oven to 400°F (200°C). Take each shrimp and wrap it with a half slice of bacon, securing the ends with a toothpick if necessary. Repeat until all shrimp are wrapped.

In a large mixing bowl, toss the wrapped shrimp with olive oil to ensure they are evenly coated.

Prepare the Glaze
In a small bowl, combine honey, sriracha sauce, soy sauce, minced garlic, and lime juice. Mix well until fully combined.

Brush the honey sriracha glaze over the bacon-wrapped shrimp using a pastry brush, making sure to coat them generously.

In a bowl or jar, combine the sliced cucumber, rice vinegar, sugar, salt, sesame oil, and sesame seeds. Mix well and let it sit for at least 15 minutes to allow the flavors to meld.
