Prime Rib

    Prepare the Roast

    Preheat your oven to 450°F (232°C).

    Season the Meat

    Rub the prime rib roast with olive oil, then generously season it with salt, black pepper, garlic powder, and fresh rosemary, ensuring it covers all sides.

    Roasting

    Place the seasoned prime rib roast on a rack in a roasting pan. Roast in the preheated oven for 20 minutes to create a crust.

    Slow Roast

    Reduce the oven temperature to 325°F (163°C) and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium rare.

    Rest the Meat

    Remove the roast from the oven, cover it loosely with foil, and let it rest for 20 minutes before slicing.

Au Jus

    Prepare the Au Jus

    While the roast is resting, combine the beef broth, red wine, Worcestershire sauce, salt, and black pepper in a saucepan over medium heat.

    Bring to a simmer and cook for about 10-15 minutes, allowing the flavors to meld. Adjust seasoning to taste.

Creamy Mashed Potatoes

    Boil the Potatoes

    Peel and chop the potatoes into evenly sized pieces. Place them in a large pot and cover with cold water. Bring to a boil and cook until tender, about 15-20 minutes.

    Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

    In a large skillet, heat olive oil over medium heat. Add chopped carrots and green beans.
