Heat oil and prep station
Line a rack with paper towels. Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C).

Make dredge and egg wash
In a shallow bowl, whisk together flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper. In a separate bowl, whisk eggs with milk to make the egg wash.

Prepare wings
Pat wings dry with paper towels. Lightly season with salt and pepper.

Dredge wings
Dredge wings in flour mixture, shake off excess. Dip into egg wash, then dredge again in flour mixture for a double coating.

Fry wings
Carefully lower wings into hot oil. Fry in batches 6–8 minutes until crisp and internal temperature reaches 165°F (74°C). Drain on a rack.

Prepare chicken strips
Pat chicken strips dry. Season lightly with salt and pepper. Dredge in flour mixture, dip in egg wash, and dredge again in flour.

Fry chicken strips
Fry strips in batches 4–6 minutes until golden and cooked through. Drain on a rack.

Prepare potato fries
Rinse and cut russet potatoes into fries. Pat dry thoroughly.

First fry potatoes
Fry potatoes in 350°F oil for 3–4 minutes. Remove and drain; let them rest briefly.

Second fry potatoes
Increase oil to 375°F and fry potatoes again 2–3 minutes until crisp and golden. Drain.

Prepare sweet potato fries
Cut sweet potatoes into evenly sized fries. Pat dry.

Fry sweet potato fries
Fry at 325°F for 3–4 minutes, then increase to 375°F and fry 2–4 minutes until crisp. Drain.

Sauce and serve
Toss wings in buffalo wing sauce until well coated. Arrange wings, chicken strips, onion rings, regular fries, and sweet potato fries on a platter. Serve with ranch dipping sauce.
