Bubba's Cobb is designed as a substantial salad for Small/Medium/Large gatherings. This recipe as written serves 4 (Medium). To scale for Small 2-3 servings or Large 6-8 servings, adjust greens and proteins by roughly halving or increasing by 1.5x.
Prep greens
Wash and chop greens
Rinse romaine and iceberg lettuce; dry thoroughly. Chop into bite-sized pieces and place in a large serving bowl as the base.
Cook proteins
Grill chicken
Season the chicken breasts with salt and pepper. Grill over medium-high heat until the internal temperature reaches 165°F (74°C). Let rest 5 minutes, then slice thinly.
Cook bacon
In a skillet, cook bacon until crisp. Drain on paper towels and crumble when cooled.
Prepare add-ins
Prep vegetables and add-ins
Halve cherry tomatoes; dice cucumber; dice avocado; thinly slice red onion; cook or warm corn if using; slice olives if desired.
Dressing
Make Cobb dressing
Whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, Worcestershire sauce, salt, and pepper. If using, stir in bacon drippings for extra Cobb flavor. Set aside.
Assemble
Assemble the Cobb
Spread the greens in a large platter. Drizzle with a portion of the Cobb dressing. Arrange chicken, bacon, eggs, tomatoes, cucumber, avocado, red onion, corn, olives in sections or rows. Sprinkle blue cheese crumbles and croutons over the top. Serve with the remaining dressing on the side.
