Pat wings dry with paper towels to remove moisture and help them crisp.

Preheat oven to 425°F (220°C). Line a baking sheet with parchment or fit with a rack over a rimmed baking sheet.

In a large bowl, whisk together baking powder, 1 tsp salt, 1 tsp black pepper, garlic powder, smoked paprika, and cayenne (if using). Add the wings and toss to coat evenly.

Drizzle the wings with 1 tablespoon neutral oil and toss again to lightly coat.

Spread the wings in a single layer on the prepared baking sheet or rack, ensuring they are not crowded.

Bake for 35–45 minutes, flipping once halfway, until the wings are crispy and golden.

BBQ option: In a small saucepan, warm the BBQ sauce until simmering, then toss the baked wings in the sauce to coat evenly.

Buffalo option: In a small saucepan, whisk together hot sauce and melted butter. Toss the baked wings in the Buffalo sauce until coated.

Lemon Pepper option: In a small bowl, whisk melted butter with lemon zest and cracked black pepper; toss the baked wings until coated.

Salt & Pepper option: Toss the baked wings with 0.5 tsp salt and 0.5 tsp black pepper to taste.

Serve immediately with celery sticks and optional blue cheese or ranch dressing.
