Method

Grains

  1. 1

In a large bowl, whisk together bread flour, granulated sugar, and salt.

  2. 2

Bloom the yeast: in a small bowl, combine warm water (about 110°F/43°C) with the active dry yeast and a pinch of sugar; set aside 5-10 minutes until foamy.

  3. 3

Whisk the warm milk, melted butter, and 1 large egg in a separate bowl.

  4. 4

Pour the yeast mixture and the milkeggbutter mixture into the dry ingredients; mix with a wooden spoon or stand mixer on low until a shaggy dough forms.

  5. 5

Knead the dough on a lightly floured surface for 8-10 minutes until smooth and elastic. Alternatively, knead with a mixer for 5-6 minutes on medium.

  6. 6

Place the dough in a lightly oiled bowl, cover, and let rise in a warm place until doubled, about 60-90 minutes.

  7. 7

Punch down the dough and divide into 12 equal pieces; roll each piece into a tight ball and place on a parchment-lined baking sheet or in a muffin-tin for even sliders.

  8. 8

Cover the formed buns and let rise again until puffy, about 30-45 minutes.

  9. 9

Preheat the oven to 375°F (190°C) while the buns rise.

  10. 10

Whisk the egg for wash with 1 tablespoon water to make an egg wash; brush the tops of the buns with the wash and sprinkle with sesame seeds if desired.

  11. 11

Bake the buns in the preheated oven for 15-18 minutes, or until the tops are golden brown. Remove from oven and cool on a rack before slicing.
