Pork and Dry Rub
Cooking liquids and aroma
To finish and serve
Method
Prepare and rub the pork
- 1
Mix the rub
In a small bowl, combine kosher salt, brown sugar, paprika, garlic powder, onion powder, black pepper, and ground cumin.
- 2
Trim any excess fat from the boneless pork shoulder, then rub the entire surface with the dry rub until evenly coated. Let sit for 15-30 minutes if time allows to let flavors adhere.
Cook the pork
- 3
Place the seasoned pork shoulder into a slow cooker (or Dutch oven). If desired, you may sear the pork in a hot skillet with a touch of oil for color before slow cooking.
- 4
Pour apple juice, apple cider vinegar, beef broth, and liquid smoke around the pork to provide moisture and smoky flavor.
Slow cooking
- 5
Cover and cook on low for 10-12 hours, or on high for 6-8 hours, until the pork is fork-tender and shreds easily.
Shred and finish
- 6
Carefully remove the pork from the slow cooker and shred with two forks, discarding any large fat chunks.
- 7
Return the shredded pork to the slow cooker and stir in barbecue sauce. Taste and adjust seasoning with a pinch of salt if needed. Keep warm.
Toast buns
- 8
Assemble
- 9
Pile a generous portion of pulled pork onto each bun. Top with coleslaw and optional pickle slices. Close the sandwich and serve immediately.
