    In a large bowl, whisk eggs with granulated sugar, brown sugar, vanilla extract, ground cinnamon, ground nutmeg, and salt until well combined and smooth.

    In a small saucepan, warm the milk and heavy cream just until steaming (do not boil). Slowly whisk the hot milk mixture into the egg mixture to temper the eggs, then continue whisking until the custard is smooth.

    Pour the tempered custard over the cubed bread. Add raisins if using. Gently fold the bread into the custard until most pieces are moistened and evenly coated. Let the mixture sit for 15-30 minutes to allow the bread to absorb the custard.
