Prepare the Chicken
Season the chicken breasts with Cajun seasoning. Heat olive oil in a skillet over medium heat and cook the chicken for about 6-7 minutes on each side or until fully cooked and golden brown.

Cook the Bacon
In the same skillet or another, cook the bacon until crispy. Remove and set aside.

Melt the Cheese
Once the chicken is cooked, place a slice of pepper jack cheese on each piece and cover the skillet to let the cheese melt for about 2 minutes.

Prepare the Aioli
In a small bowl, mix the chili ancho aioli ingredients (if making homemade) or use store-bought.

Assemble the Sandwich
On the bottom half of the burger bun, spread a generous amount of chili ancho aioli. Layer with lettuce, sliced tomato, cooked chicken with melted cheese, crispy bacon, red onion slices, and pickles. Top with the other half of the bun.

Serve the Texas Chicken Sandwich with a side of fries.
