1. Prepare the Shrimp
In a large bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth. Dip each shrimp into the batter, allowing the excess to drip off.
2. Fry the Shrimp
Heat the oil in a deep fryer or large pot to 350°F (175°C). Carefully add the battered shrimp, a few at a time, and fry until golden brown (about 3-4 minutes). Remove and drain on paper towels.
3. Make the Spicy Sauce
In a separate bowl, mix together mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth.
4. Combine and Serve
Toss the fried shrimp in the spicy sauce until well coated. Serve immediately.
